Ingredients
- 2 1/2 cups pastry flourOr 1/2 cake, 1/2 all purpose
- 1/3 cup non-diastatic malt powder
- 2 1/4 tsp dry yeast
- 1 tsp sugar
- 1 tsp salt
- 1 tsp baking soda
- 2 1/2 cups whole milk
- 1 stick butter, room temperatureCold butter is ok but the mix may overheat while melting it
- 3 egg whites, room temperature116 grams
