On my iron (which flips), I use 1 cup batter per waffle, 3 mins, flip immediately then at halfway. Preheat iron well.

Ingredients

  • 2 1/2 cups pastry flour
    Or 1/2 cake, 1/2 all purpose
  • 1/3 cup non-diastatic malt powder
  • 2 1/4 tsp dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 1/2 cups whole milk
  • 1 stick butter, room temperature
    Cold butter is ok but the mix may overheat while melting it
  • 3 egg whites, room temperature
